3rd Class entree Roast Pork with Sage and Pearl Onion

Hi, just wanted to share this! It was very time consuming (though not as bad as the 1st Class recipes), but worth it! Very rich and flavorful.

This meal was probably better than what most steerage passenger ever had in their lives!

I followed the recipe given in "Last Dinner on the Titanic" to a tee, though I think I might have just slightly overdid the port when making the sauce.
