A charlotte is a dessert pudding - in its simplest form a casing made from sponge cake, bread or biscuits and filled with trifle (stewed fruit, custard, whipped cream etc). Charlotte Russe was the first (and maybe still the most exotic) version, and there are plenty of recipes for that online. I don't know about Colville - maybe the name of a particular chef or restaurant well known back in 1912 but since forgotten.
