What would happen if someone died on Olympic during a crossing? Did the Olympic have a morgue, so they could be buried properly when they arrived at fx New York? Or would they be buried at sea?

Most were buried at sea. There was no morgue on Olympic (there was one built on the Poop Deck of the Britannic for her role as a hospital ship).
There were quite a number of deaths of Olympic (death at sea wasn’t uncommon) through accidents and natural causes.
Mark Chirnside’s excellent book on the Olympic would have more details! Highly recommend if you want to learn more about the often overlooked vessel.
