Second class menus

So I was going over Bob Ballard's "Lusitania" book, which had reproduction of a couple of menus and while 1st and steerage (!!!) classes bill of fare could easily compete with what was served on the Olympic class vessels, I found the menu for 2nd Class to be very... Well, LAME compared to what was known to be served on the Olympic and Titanic! What's up with that? It's especially bizarre since even the steerage classes had about an equal quality of food, but the 2nd Class on Cunard's flagships really had nothing special to offer during meals...
