when jack, fabrizio and tommy go up some stairs to d deck and then rip up the bench to break the gate, my question is was this stair made up just for the movie? all i am seeing on the deck plans is the main stairwell.

Edit: also when they are running from lovejoy trough the dining room and into the pantry and go there down some stairs where you see dining plates in the cabinet. one stairs going up and one stair going down. where these stairs real?

Yes. There were a lot of sets which amounted to little more then plot devices. The Master-At-Arms shack for example, which was shown as being on the port side of the ship, complete with a porthole. On the real Titanic, this space was located on E-Deck on the centreline just aft of the forward 3rd Class accomadation.
