I was wondering, what if the Britannic never sank? Like, what if the Britannic never struck the mine? Would after the war would end, would it go back to the regular voyages like it was supposed to?

Yes if Britannic had survived the war she would've served the trans-atlantic route alongside her sister Olympic.
